1. Rub the beef with the pepper. Set aside.

2. Set the Instant Pot to Sauté and heat the olive oil in the inner pot.

3. Sauté the beef for about 10 minutes, searing each side.

4. Remove the beef and set it aside.

5. Sauté the onion and garlic for about 3 minutes, then add the carrot and celery and continue sautéing for about 5 more minutes.

6. Pour in the apple juice and scrape the bottom of the pot to “deglaze.”

7. Press Cancel. Add the beef back in, and add the cranberries, parsley, and bay leaf. Make sure the sprig of parsley and bay leaf are tucked into the liquid.
